Attached is a copy of the 2 energy bite recipes discussed during the session. The no-bake and bake oncology center recipes. The OT students collaborated with a licensed dietician for the recipe and the list of ingredients and what the ingredients are good for. Also, at the end of the recipe are notes on storage and other helpful tips.
Here are my Energy Bites using almond butter and chocolate chips. I used the stand mixer, which worked well. I added about 1/8 tsp of black pepper since it works well with turmeric. You don’t taste it. There is a bit left that I put in the fridge since it was a little crumbly. I didn’t have room in the freezer. I’d say it makes 20 balls. I could eat these every day. Next time I’ll try craisins.
